Ingredients:
2 1/2 lbs Chicken, trimmed/disjointed & cut into pieces
4 medium-large Potatoes, peeled/cubed
3 Sweet Onions, cubed or chopped
1 can [or fresh, cut] French Green Bean
1/2 cup sliced Green Olives
1/2 cup sliced Pimiento [or Red Pepper]
2 cloves Garlic, minced
2 tsp Sea Salt
1 tsp freshly ground Black Pepper
2 tsp Spanish Paprika
1/4 cup Olive Oil
2 Bay-Leaf
1/2 cup White Wine
1 tblsp light-Brown Sugar
1 tblsp Sweet Cream Butter [optional]
Guisado De Pollo / Cuban Chicken Stew
How-to:
1/ Mix Garlic, Salt, Pepper and Paprika. Blend well.
2/ Rub/mix #1 above into Chicken .
3/ Heat Olive Oil in a saucepan/pot.
4/ Add Onions, saute for 5 min, stirring frequently; remove & set aside.
5/ Add Chicken & stir fry until brown, on all sides; remove & set aside.
6/ Pour White Wine into the pot & deglaze, using a wooden spoon to stir/scrape the bottom.
7/ Add Onions [#4] + Chicken [#5] + 2 Bay-Leaf to the pot.
8/ Partially cover the pot, cook over medium heat for 45 - 50 min.
9/ Add some Chicken broth, if needed.
10/ Add Potato cubes, and stir gently.
11/ Cover and cook over low heat for another 20 min. Optional: add Butter.
12/ Adjust (salt/sugar) to your taste. Add Beans, Olives, Pimentos and cook over low heat abt 15 min.
***The flavour will be at its best if this stew is prepared [at least 1/2 - 1 day] in advance and, of course, reheated before serving.
